Chardonnay on the Gimblett Gravels ripens under heat the stones give back through the evening. The fruit arrives at the winery already where we want it, so we are not correcting acidity to make the wine work.
It shows citrus and stone fruit with a soft spice behind it. We make it at three levels. The Gimblett Gravels Chardonnay is the estate wine and the one to drink through the week. Declaration is the reserve, made only in exceptional years. Instinct Chardonnay is the entry-level one.
